Belis is a high-elevation coffee-growing community (1,400–1,700 MASL) in Benguet, Philippines, known for farming vegetables and coffee since post-WWII. Traditionally, farmers processed coffee using varied methods passed down through generations, which resulted in inconsistent quality. With the establishment of a community washing station, farmers were trained on standardized processing, improving quality and consistency while also creating local jobs and income support for smaller farmers. Cherries are harvested daily, depulped, and wet fermented for 36–48 hours, then fully washed and dried on raised beds. After drying, the coffee rests in parchment for 4–6 weeks before hulling, hand-sorting, and export preparation.
